Scoatem legumele din apa in care au fiert si pastram 5-6 cani din aceasta apa. In continuare, sau le trecem prin sita, sau folosim aparatele care ne sunt la dispozitie precum tocatorul, blenderul sau mixerul pentru un rezultat mai rapid. Punem pasta care rezulta din nou in apa in care au fiert legumele si adaugam sare si piper. Lasam sa mai fiarba la foc potrivit 1-2 min. amestecand ca sa nu se prinda si servim supa calda.</li>			</ol>

Lintea apartine, ca si fasolea, categoriei legumelor uscate si este o sursa buna de proteine vegetale si o mancare sanatoasa. Adaugam uleiul si lasam sa fiarba pana se inmoaie lintea. Adaugam ceapa curatata intreaga, rosiile, usturoiul, dafinul, menta creata (optional), sarea, piperul si oregano si lasam sa fiarba pana se ingroasa zeama (aprox. 2 ore). Amestecam din cand in cand cu o lingura de lemn ca sa nu se prinda. Ca sa fie gustoasa, supa care rezulta trebuie sa fie de consistenta groasa. La sfarsitul fiertului se adauga si 2-3 linguri de otet si se mai da in cateva clocote.</li>			</ol>

Lasam oala descoperita pana se ridica spuma si o scoatem cu lingura cu gauri pana nu se mai ridica. Adaugam si ceapa intreaga, acoperim oala si fierbem aprox. ½ de ora pana se inmoaie carnea. Scoatem apoi carnea de pui si o lasam putin sa se raceasca si o preparam in continuare conform retetelor <a href="https://retetegrecesti.gr/retete/carne-mancaruri-cu-carne/pui-la-cuptor-cu-orez/">Pui la cuptor cu orez</a> sau <a href="https://retetegrecesti.gr/retete/carne-mancaruri-cu-carne/carne-de-pui-la-cuptor-cu-cartofi/">Carne de pui la cuptor cu cartofi</a>. Intre timp fierbem orezul si cand e aproape gata il rasturnam in sita si il spalam la jet cu apa rece, dupa care il adaugam in supa. Adaugam si sare si piper dupa gust. Lasam sa mai fiarba aprox. 6-7 minute, luam dupa foc si scoatem ceapa. La sfarsit dregem cu zeama de lamaie (putem folosi si sare de lamaie daca ne place mai acra).</li>			</ol>

Adaugam putin cate putin lamaia, batem inca putin si apoi punem una cate una 3-4 linguri de zeama din supa. Pe urma adaugam totul in supa si amestecam cateva minute ca sa nu se coaca oul, dar si ca sa se uneasca toate ingredientele.</li>			</ol>

A doua zi aruncam apa si punem din nou nautul in apa rece (nivelul apei sa fie aprox 2-3 degete deasupra nautului), adaugam bicarbonatul si amestecam sa se dizolve si apoi il mai lasam inca 1 ora la inmuiat. Aruncam apa si spalam bine nautul, apoi il punem la fiert in apa suficienta. Scoatem spuma care se formeaza la fiert si eventual cojitele care ar mai putea fi prezente (desi nautul este decorticat) si il lasam sa fiarba aprox 15 minute. Aruncam apa si punem din nou la fiert in apa fiarta (aprox. 8-10 cani de apa). Adaugam ceapa, usturoiul, morcovul (optional), dafinul, uleiul, sarea si piperul si lasam sa fiarba pana se inmoaie bine nautul dar fara sa lasam sa se zdrobeasca (aprox 1 ½ - 2 ore, in functie de calitatea nautului). Amestecam din cand in cand cu o lingura de lemn ca sa nu se prinda si daca e nevoie mai adaugam apa fiarta. Ca sa fie gustoasa, supa care rezulta trebuie sa fie de consistenta groasa. La sfarsitul fiertului stingem focul si adaugam zeama de lamaie si oreganul (optional). La servit putem adauga putin marar pe deasupra ca ornament (optional).</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Si inca ceva</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Daca dam ceapa prin tocator inainte de a o adauga, supa iese mai cremoasa, iar gustul si aroma cepei sunt mai intense.</li>			</ol>

Fierbem 10-12 min (sau dupa recomandarea dupa pachet), le rasturnam in sita si le spalam putin in jet de apa rece la robinet. Pastram putin din apa in care au fiert spaghetele.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Spalam ciupercile si daca sunt de marime mare le taiem in bucati. Incalzim intr-o cratita uleiul, adaugam ciupercile si usturoiul, le calim cateva minute si stingem cu vinul alb dupa care lasam sa fiarba 2-3 minute sa se evaporeze alcoolul. Adaugam apa pe care am pastrat-o de la fiertul spaghetelor, adaugam si sarea, piperul, oreganul, busuiocul si patrunjelul (nu tot, pastram 1-2 linguri pentru ornament) si lasam sa fiarba 10-15 minute. Adaugam la sfarsit si spaghetele si amestecam sa se omogenizeze. Cand servim, ornamentam pe deasupra cu patrunjelul pe care l-am pastrat. Daca nu suntem in perioada de post, presaram pe deasupra cu parmezan ras, gustul lui se imbina perfect.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Si inca ceva</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Putem adauga cateva picaturi de ulei de trufa pentru a intari gustul si aroma ciupercilor.</li>			</ol>

		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Executare</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Punem apa (in care am adaugat sare) la fiert si cand da in clocot punem spaghetele, avand grija sa amestecam ca sa nu se lipeasca intre ele. Fierbem 10-12 min (sau dupa recomandarea dupa pachet), le rasturnam in sita si le spalam putin in jet de apa rece la robinet. In cratita in care au fiert spaghetele pastram 1 pahar din apa in care au fiert, adaugam uleiul si cand se incinge adaugam spaghetele si amestecam.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Incalzim intr-o cratita uleiul, adaugam carnea tocata si lasam sa se distuiasca bine. Presam carnea cu o furculita pentru ca are tendinta sa faca cocoloase si avem grija sa amestecam din cand in cand ca sa nu se prinda la fund. Stingem cu vin alb ,lasam sa fiarba 2-3 minute pana se evapora alcoolul si adaugam rosiile date pe razatoare (sau/si sucul de rosii), sarea, piperul, zaharul, oregano, busuiocul, frunze de dafin dupa preferinta si putina apa si apoi lasam sa fiarba la foc mic 30-40 min pana se mai ingroasa sosul, amestecand din cand in cand. Servim spaghetele cu cateva linguri de carne pe deasupra si presaram cu cascaval ras sau cu branza.</li>			</ol>

		</div>		<div class="blog-yumprint-method-section" yumprintsection="2">			<div class="blog-yumprint-subheader">Pentru prajitura </div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Intr-un castron amestecam toate ingredientele solide si apoi adaugam si apa putin cate putin amestecand incontinuu pana se integreaza toata in compozitie. Rasturnam in tava pe care am uns-o in prealabil (eu am folosit una de 34 cm diametru) si nivelam suprafata.  Acoperim cu o folie de plastic si lasam cel putin 2 ore ca grisul sa absoarba bine tot lichidul. Coacem la cuptor preincalzit la 180 oC aprox. 30 min. pana se rumeneste bine. Scoatem din cuptor, taiem in bucati si ornamentam fiecare bucata cu cate o migdala (optional) si lasam sa se raceasca in timp ce preparam siropul.</li>			</ol>
		</div>		<div class="blog-yumprint-method-section" yumprintsection="3">			<div class="blog-yumprint-subheader">Pentru sirop</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Punem toate ingredientele pentru sirop intr-o cratita si lasam sa fiarba aprox. 7 min. din momentul in care incepe sa clocoteasca. Luam cratita dupa foc, lasam 1-2 min sa se odihneasca, stoarcem de lichid bucatile de lamaie si le scoatem si apoi turnam cu un polonic siropul cald peste prajitura rece. Lasam sa se absoarba bine siropul si servim.</li>			</ol>
		</div>		<div class="blog-yumprint-method-section" yumprintsection="4">			<div class="blog-yumprint-subheader">Si inca ceva</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">-	Cana folosita este de 200 ml capacitate.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">-	Pentru a abtine migdale fara coaja le fierbem cateva minute si apoi le descojim, coaja iese foarte usor.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">-	O alta varianta de a pune migdalele pe deasupra ca ornamentatie este de a cresta prajitura in bucati inainte de a o pune la cuptor, apoi punem cate o migdala pe fiecare bucata si o coacem la cuptor. Astfel se rumenesc si migdalele.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">-	Siropul se adauga cald peste prajitura rece sau rece peste prajitura calda. In felul acesta nu se « innoroieste ».</li>			</ol>

Este mancarea traditionala de Craciun intr-o regiune specifica in nord-vestul a Greciei, localizata in Kozani si Siatista. Sarmalele intalnite acolo sunt asemanatoare cu sarmalele romanesti, cu varza acra preparata in acelasi mod, cu aceeasi umplutura si gust. In afara numelui (se numesc «iaprakia»), exista si alta diferenta pentru respectivele sarmale: sunt rotunde si mai mari ! Nu se stie daca asemanarea este o coincidenta, sau daca este rezultatul schimburilor comerciale intense din secolul al 17lea  si al 18 lea intre aceste regiuni si Romania. 		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Executare</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Taiem foile de la varza, le punem intr-un lighenas cu apa si le lasam cateva ore ca sa se desareze. Apoi le clatim si taiem cotoarele si nervurile tari. Daca foile sunt mari le taiem in mai multe bucati, in functie de marimea si de forma dorita a sarmalelor. Pentru a prepara sarmalele rotunde si mari eu le tai in 2 sau in 3 bucati.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Intr-o cratita mare punem jumatate din ulei si apoi asternem 2 foi mari de varza ca sa nu se prinda sarmalele pe fundul cratitei.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">Preparam umplutura intr-un castron in care amestecam cele doua feluri de carne tocata, cealalta jumatate de ulei, ceapa, rosiile, orezul (pe care l-am spalat anterior intr-o strecuratoare), zeama de la o lamaie, 1 pahar de zeama de varza sau de apa (daca vrem sarmalele mai putin sarate), sare, piperul negru, oregano, le framantam bine si lasam la o parte ½ ora ca sa patrunda aromele in toata compozitia.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">Luam apoi din amestec cate o lingura plina, o punem in mijlocul foii de varza pe care o tinem in palma si o impaturim de jur imprejur ca sa-i dam o forma rotunda. O stoarcem usor si o punem in cratita. Asezam sarmalele una langa alta si presaram fiecare serie cu putin piper rosu si 3-4 boabe de ienibahar. Dupa ce le punem pe toate, turnam sucul de rosii, zeama de la o lamaie si zeama de varza sau apa pana le acoperim aproape. Punem pe deasupra 2 foi de varza sau varza tocata si le punem la fiert 3-4 ore la foc mic.  In timpul fiertului, daca e nevoie, adaugam apa sau scoatem din zeama in cazul in care se varsa.</li>			</ol>
		</div>		<div class="blog-yumprint-method-section" yumprintsection="2">			<div class="blog-yumprint-subheader">Varianta cu varza dulce </div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Cu aceeasi umplutura si mod de preparare putem face sarmalele cu varza dulce in loc de varza acra. In acest caz curatam varza de primele foi si le aruncam, apoi scoatem urmatoarele foi si le oparim intr-o cratita mare pana se inmoaie bine, astfel incat sa le putem folosi sa infasuram sarmalele fara sa se rupa. Daca le vrem mai sarate si mai acre, adaugam la fiert sare de lamaie. De asemenea, daca le dorim mai picante folosim in timpul prepararii mai multa sare, piper negru si rosu si lamaie.</li>			</ol>

		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Executare</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Curatam salata verde, o lasam in apa cu otet cel putin 10 min si apoi o spalam foaie cu foaie. O taiem in bucatele mici si o punem intr-un castron mai mare. Curatam si spalam ceapa, o taiem in bucatele sau in rondele si o adaugam la salata (optional). Adaugam cubuletele de portocale si samburii de rodie. Preparam sosul de otet amestecand mustarul (optional), mierea, otetul si uleiul pana se uniformizeaza, apoi il turnam peste salata, adaugam sare dupa preferinta, amestecam totul bine si servim.</li>			</ol>

		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Executare</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Spalam dovleceii, le taiem cotoarele si ii taiem in patru. Putem sa ii taiem drept (vezi fotografia 2 de mai jos) sau putem sa taiem fiecare jumatate in diagonala (vezi fotografia 3 de mai jos). In paralel tunem apa la fiert la foc puternic si adaugam sare. Cand clocoteste bine punem dovleceii si ii lasam sa fiarba 3-4 min la foc puternic. Dovleceii fierti trebuie sa se inmoaie putin dar in acelasi timp sa ramana crocanti. Pentru a reusi asa ceva trebuie sa pastram timpul de fiert. Avand insa in vedere ca atunci cand adaugam dovleceii in apa clocotita se schimba temperatura si nu mai clocoteste apa, incepem sa masuram minutele din momentul in care incep sa fiarba din nou si ii incercam din cand in cand cu furculita (daca intra usor sunt gata). Ii strecuram apoi in sita. Ii punem in farfurie, adaugam ulei de masline si zeama de lamaie, amestecam sa se omogenizeze si presaram pe deasupra patrunjel.</li>			</ol>
