Are denumirea latina « Octopus » si denumirea greceasca « Oktapodi » adica opt picioare (tentacule). Dupa cum este de asteptat, in Grecia este unul dintre cele mai preferate aperitive la un pahar de ouzo sau de vin, dar detine si primul rol in perioadele de post. Se prepara in diferite feluri, toate foarte gustoase, fiind ea insasi foarte gustoasa. Am ales aici pentru d-voastra un mod de preparare usor de facut in casa,  pe care l-a experimentat sotul meu, iar rezultatul e reusit si garantat. 		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Executare</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Curatam caracatita in felul urmator: incepem cu zona unde se intalnesc tentaculele cu sacul – acolo se gaseste un os, « dintele » si sacul de cerneala  pe care le indepartam cu un cutit ascutit. In continuare despicam sacul in lung si indepartam intestinele si apoi ochii. Daca folosim caracatita congelata trebuie sa facem decongelarea la frigider si conform indicatiilor de pe pachet. O spalam foarte bine cu apa rece. O taiem in bucati, tentaculele intregi si sacul in jumatate si o punem in oala sub presiune, adaugam otetul si o fierbem aprox. 35 min. In continuare scoatem caracatita, o punem intr-o tava pe care am uns-o cu ulei, adaugam oregano si coacem la cuptor preincalzit la 200oC aprox. 15 min. pana se rumeneste bine. Taiem, daca e prea mare, in bucati mai mici si servim pe platou ornamentand cu feliute de ceapa.</li>			</ol>
		</div>		<div class="blog-yumprint-method-section" yumprintsection="2">			<div class="blog-yumprint-subheader">Si inca ceva </div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">-	Caracatita preparata astfel se poate pastra la frigider intr-un borcan in care adaugam ulei, otet, sare, si pentru gust cateva boabe de piper si 2-3 catei de usturoi.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">-	De asemenea putem sa o folosim la prepararea altor feluri de mancare pe baza de caracatita, de exemplu caracatita cu macaroane, cu spanac si altele.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">-	Nu este nevoie sa o curatam de piele, care de altfel este si foarte gustoasa.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">-	Caracatita congelata este mai moale decat cea proaspata.</li>			</ol>

M-am hotarat insa sa postez reteta, desi am evitat o bucata de vreme, pentru ca este o reteta reusita si pentru ca, daca tot trebuie sa o facem, cel putin sa fie un rezultat remarcabil. Si pe greceste se numeste «coliva» si provine din greaca veche din cuvantul «kolivos» care inseamna graunta de cereale. 		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Executare</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Punem seara arpacasul la inmuiat si a doua zi il strecuram si il punem la fiert. Cand fierbe despumam. Aruncam prima apa dupa ce lasam sa clocotesca cateva minute, adaugam apa din nou si lasam sa fiarba la foc mic 1½ ora aprox. pana se inmoaie bine bobul de arpacas. La sfarsitul fiertului adaugam zaharul si un praf de sare si amestecam ca sa nu se prinda. Dupa ce a fiert il punem intr-o strecuratoare sa se scurga bine apa si apoi intr-un servet curat ca sa traga apa care a ramas. Punem intr-un caston, adaugam toate ingredientele si amestecam sa se uniformizeze bine amestecul. Pe un disc oval sau pe o farfurie lata mare punem un servet alb dantelat si pe deasupra punem folie de aluminiu (daca nu folosim servetul dantelat nu e nevoie de folie). Punem apoi amestecul pe disc sau pe o farfurie lata pe o foaie de hartie de copt si presam  cu hartia ca sa-i dam forma dorita. Acoperim coliva cu pesmet pisat, presam iarasi cu hartia ca sa se stabilizeze pesmetul, presaram cu zaharul pudra pe toate partile si din nou presam cu hartia de copt ca sa ia un aspect uniform. In continuare taiem hartia de copt in plus de jur imprejurul colivei. Punem pe deasupra hartia pe care am decupat crucea si literele dorite si presaram cu scortisoara, ornamentam apoi de jur imprejur cu nucile taiate in jumatate si coliva e gata de dus la biserica.</li>			</ol>

		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Executare</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Daca folosim calamari congelati ii lasam sa se dezghete in frigider sau in aer. Daca sunt intregi trebuie sa ii curatam. Taiem partea cu tentaculele si inlaturam ochii. Tragand tentaculele ies impreuna si intestinele pe care le aruncam. Inlaturam osul gelatinos care se gaseste in interiorul corpului. Ii taiem apoi in rondele de aprox. 2 cm. grosime. Daca sunt mici se pot praji intregi. Ii spalam bine si ii lasam in sita sa se scurga de apa, iar apoi ii punem pe o hartie de bucatarie sau pe servetele pentru a absorbi apa ramasa. Intr-o punga de plastic punem faina si amidonul (optional) si apoi punem si calamarii. Inchidem bine punga si o intoarcem pe toate partile ca sa se acopere bine cu faina si in exterior si in interior si ca sa absoarba bine umezeala lor. Punem ulei mai mult intr-o tigaie si dupa ce se incinge bine punem calamarii, pe care i-am scuturat usor intai ca sa cada faina in plus. Punem calamarii cate putini ca sa nu scada temperatura uleiului. E bine sa fie suficient ulei ca sa-i acopere. Lasam sa se prajeasca aprox. 1 minut pe o parte, pana prind o culoare galben aurie si apoi ii intoarcem si pe partea cealalta si ii lasam inca aprox. 1 min. Timpul de prajit nu trebuie se depaseasca 2-3 min. dupa ceas si este important sa nu ii lasam mai mult pentru ca se intaresc. Ii scoatem cu o paleta cu gauri si ii punem pe hartie de bucatarie sau pe servetele ca sa absoarba uleiul in plus si ii presaram cu sare. Nu trebuie sa le punem sare inainte de a-i praji pentru ca se strang. Ii servim calzi si punem daca vrem pe deasupra zeama de lamaie in momentul in care ii consumam (optional). Ornamentam cu rondele de rosii, ardei si lamaie.</li>			</ol>
		</div>		<div class="blog-yumprint-method-section" yumprintsection="2">			<div class="blog-yumprint-subheader">Si inca ceva </div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">-	In Grecia se obisnuieste sa se puna zeama de lamaie pe deasupra calamarilor sau a pestilor prajiti in momentul in care se consuma. Folosind lamaie ii inmoaie putin si nu mai sunt atat de crocanti, dar asta este in functie de preferinta fiecaruia: gustul mai acrisor sau cel mai crocant. Cel mai bine este sa incercati si sa alegeti d-voastra !</li>				<li class="blog-yumprint-method-item" yumprintitem="1">-	Secretul reusitei pentru calamari crocanti exterior si moi interior este uleiul incins bine, sarea la sfarsitul prajitului si nu inainte, sa punem calamarii cate putini in uleiul incins ca sa nu scada temperatura uleiului. Dar cel mai important este de a nu depasi timpul de prajit.</li>				<li class="blog-yumprint-method-item" yumprintitem="2">-       Amidonul de porumb face calamarii mai pufosi.</li>				<li class="blog-yumprint-method-item" yumprintitem="3">-	Calamarii congelati se pot gasi intregi, dar si in forma de rondele curatate si taiate gata de prajit si sunt de asemenea foarte gustosi.</li>			</ol>

Solutia este sa-i prajim la cuptor cu putin ulei si fara tigaie. 		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Executare</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Curatam cartofii, ii spalam si ii taiem in rondele de 0,5-1 cm grosime. Ungem cu ulei cu o pensula o hartie de copt, ii punem la rand pe ea, ii ungem pe deasupra cu ulei si ii presaram cu sare, dupa preferinta. Ii coacem la cuptor preincalzit la 250 oC aprox. 20-25 min., timp in care, cand se rumenesc pe o parte ii intoarcem si pe partea cealalta. Cand se rumenesc si pe partea aceasta ii scoatem si ii servim calzi. Cartofii rezultati astfel sunt crocanti in exterior si moi in interior, ca si cei prajiti, dar cu mult mai putin ulei.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Alternativ putem si dupa ce ii taiem in rondele sa ii punem intr-un castron, sa punem uleiul si sarea si sa ii amestecam sa se omogenizeze si apoi sa-i punem pe hartia de copt si sa-i coacem. Folosim metoda care ne este mai la indemana, ies la fel de buni.</li>			</ol>

Ii aranjam in tava si adaugam usturoiul, sarea, piperul si oreganul, zeama de lamaie (optional), uleiul si ½ cana de apa. Amestecam ca sa se uniformizeze ingredientele, acoperim tava cu capac sau cu hartie de copt si o bagam la cuptor preincalzit la 250 oC aprox. ½ ora. Inlaturam capacul si lasam pana se rumenesc.</li>			</ol>

		</div>		<div class="blog-yumprint-method-section" yumprintsection="1">			<div class="blog-yumprint-subheader">Executare</div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Incingem intr-o cratita uleiul si punem bucatile de carne la rumenit intorcandu-le pe o parte si pe alta pana prind culoare. Adaugam si ceapa si amestecam pana se inmoaie putin. Stingem cu vin, dupa care lasam sa fiarba 2-3 minute pana se evapora alcoolul. Adaugam apa pana acoperim aproape mancarea, inchidem capacul si lasam sa fiarba la foc potrivit aproximativ 2 ½ ore, pana se inmoaie bine carnea. Adaugam apa din cand in cand ca sa nu se prinda. Pentru usurinta si pentru a scurta timpul fierberii putem folosi o oala sub presiune. Intre timp pregatim ardeii. Ii spalam, le taiem cotorul si apoi ii taiem in doua in lung si ii curatam de seminte. Cand carnea este aproape gata adaugam ardeii, rosiile, bulionul, zaharul, sarea, piperul si ardeiul iute (optional) si continuam fiertul pana se inmoaie ardeii si se mai ingroasa sosul.  Se serveste simplu sau cu garnitura de orez pilaf sau cartofi, dupa preferinta.</li>			</ol>

Stingem cu rosiile. Adaugam restul ingredientelor si apa pana aproape acoperim mancarea, inchidem capacul si lasam sa fiarba la foc potrivit aproximativ 2 ½ ore, pana se inmoaie bine carnea. Adaugam apa din cand in cand ca sa nu se prinda. Pentru usurinta si pentru a scurta timpul fierberii putem folosi o oala sub presiune. In acest caz dupa ce stingem cu rosiile, adaugam ceapa si o cana de apa, inchidem capacul si fierbem sub presiune 1 ora. Deschidem apoi capacul, adaugam restul ingredientelor si mai lasam sa fiarba ½ ora.  La sfarsit luam capacul, dam focul mai tare si lasam sa mai fiarba cateva minute pana se leaga sosul. Se serveste cu garnitura de orez pilaf sau cartofi.</li>			</ol>

Inlaturam capul si carapacea si scoatem apoi « vena » care se gaseste sub suprafata spinarii (acesta este de fapt intestinul lor) crestand usor cu un cutit si folosindu-ne apoi de o scobitoare. Putem lasa capul si coada, daca preferam acest aspect. Daca folosim creveti congelati si sunt gata curatati, ii decongelam, ii spalam cu apa rece si ii lasam sa se scurga in sita. Punem uleiul in tigaie si calim crevetii 1-2 minute, adaugam apoi si ceapa, usturoiul, ardeii si ardeiul iute si calim usor inca 1-2 minute. Scoatem crevetii intr-o farfurie. Adaugam rosiile, bulionul, zaharul, sarea si piperul si lasam sa fiarba pentru 10 minute. Punem iar crevetii si zeama pe care au lasat-o in farfurie, adaugam si patrunjelul, busuiocul si oregano si mai lasam sa fiarba inca 2-3 minute ca sa se omogenizeze gustul si aromele. La sfarsit adaugam si branza si luam dupa foc. Presaram cu putin patrunjel proaspat si servim calzi.</li>			</ol>

In casa, pentru ca e mai greu sa avem la dispozitie un gratar aprins de cate ori vrem, am gasit o solutie mai practica. Facuti in cuptor ca la gratar. Daca sunt congelati ii lasam sa se dezghete in frigider sau in aer. Ii curatam de intestine (daca nu sunt deja curatati) si inlaturam osul gelatinos care se gaseste in interiorul corpului, apoi ii spalam. Ungem fundul tavii cu ulei. Ungem si calamarii si ii presaram cu sare, oregano si cu rozmarin. Avand in vedere ca sunt deja sarati de la sine punem putina sare sau chiar deloc. Coacem la cuptor preincalzit la 250 oC la gril aprox. 10 min. pana se rumenesc, intoarcem si mai lasam inca cateva minute ca sa prinda culoare si pe partea cealalta. Ii servim intregi sau in bucati ,cu sos de ulei de masline cu lamaie.</li>			</ol>
