De asemenea o sa includ aici si reteta de iaurt grecesc care se foloseste la prepararea tzatzikiului, un iaurt de consistenta groasa care rezulta din scurgerea iaurtului obisnuit si se numeste « stranghisto ». Tzatziki </div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Curatam castravetele, il dam pe razatoarea mare si il stoarcem bine pana nu mai lasa apa. Dam cateii de usturoi prin presa de usturoi. Punem iaurtul intr-un castron, adaugam castravetele, usturoiul, sarea, piperul si mararul si le amestecam sa se omogenizeze. Incepem sa adaugam cate putin ulei si otet alternativ si amestecand incontinuu, asa cum procedam la maioneza. Servim intr-un castron sau pe o farfurie ovala punand pe deasupra ca decor putin marar si cateva masline.</li>			</ol>

Iaurt de consistenta groasa « stranghisto » </div>			<ol class="blog-yumprint-methods" itemprop="recipeInstructions">				<li class="blog-yumprint-method-item" yumprintitem="0">Punem tifon intr-o sita si o punem intr-un vas mai inalt (castron, cratita sau lighenas) in asa fel incat sa se sprijine pe margine si sa ramana la fund o distanta maricica intre fundul strecuratorii si a castronului. Aceasta distanta este necesara pentru a se acumula acolo lichidul. Punem apoi iaurtul pe tifon in sita si il lasam la frigider ca sa se scurga lichidul din el aproximativ 3 ore.</li>			</ol>

Asezam peste ele feliile de rosii si feliutele de ardei si cele de ardei iute daca o vrem mai picanta (optional). Adaugam pe deasupra ulei, piper si oregano, acoperim cu o hartie de copt si bagam la cuptor preincalzit la 200 oC 15 min pana se inmoaie. Inlaturam hartia de copt si mai lasam la 250 oC inca 15-20 min. pana ia putina culoare. Se poate face si la cuptorul cu microunde unde se pune pentru cateva minute pana se topesc materialele putin si se inmoaie.</li>			</ol>

Curatam cochiliile lor de materiile lipite de ele cu un burete sarmos sau cu o perie tare si cu un cutit inlaturam ceea ce a mai ramas. Tragem usor firul cu care se prind de stanci si le mai spalam inca o data bine.</li>				<li class="blog-yumprint-method-item" yumprintitem="1">Incalzim intr-o cratita uleiul si calim putin ceapa, ardeii si usturoiul. Adaugam midiile si mustarul si apoi stingem cu vin. Adaugam si patrunjelul, sarea si piperul, acoperim cu capacul si lasam putin sa mai fiarba, aprox. 4 min. Atentie, nu depasim timpul de fiert pentru ca midiile se intaresc daca fierb mai mult. Aruncam midiile care nu s-au deschis la fiert. Servim midiile deschise intr-un castron impreuna cu tot sosul lor.</li>			</ol>

Umpleti cochilia cu acest sos delicious inainte de a manca midia, folosind-o ca pe o lingura. Insoteste totdeauna codul care se mananca pe 25 martie, Sarbatoarea de Buna Vestire, care este in acelasi timp si sarbatoare nationala in Grecia. In aceasta zi, care pica totdeauna in Postul Pastelui, este dezlegare de peste si reteta traditionala de baza a zilei este cod prajit pane cu garnitura de skordalia. Strivim usturoiul prin presa de usturoi si adaugam. Adaugam si restul materialelor si le amestecam bine pana omogenizam compozitia. Daca dorim sa fie mai moale putem adauga putina apa. Nu dam cartofii prin tocator pentru ca rezulta o pasta lipicioasa si nu obtinem textura dorita a piureului. La sfarsit ornamentam cu patrunjel pe deasupra (optional).</li>			</ol>

O stoarcem bine si o faramitam marunt. Pentru usurinta o putem pune la tocator. Strivim usturoiul prin presa de usturoi sau il punem direct in tocator. Adaugam si restul materialelor si le amestecam bine sau le dam prin tocator pana se face ca o pasta.  Dandu-le prin tocator obtinem o pasta cremoasa si catifelata. Altfel iese mai grunjoasa, cu aspect mai rustic si mai traditional. Amandoua sunt la fel de bune. La sfarsit ornamentam cu patrunjel pe deasupra (optional).</li>			</ol>

Nucile trebuie sa se simta in skordalia si sa dea un rezultat crocant. Delicios !!!</li>				<li class="blog-yumprint-method-item" yumprintitem="1">-	Daca dorim sa iasa mai deschisa la culoare putem folosi migdale in loc de nuci, tot ½ de cana. E vorba de felii de paine inmuiate in ou si apoi prajite in ulei, « Avgofetes » pe greceste, delicioase si hranitoare, preferate in mod deosebit de toti copiii. Nepotica mea, daca o intrebam ce ar vrea sa manance, la orice ora a zilei, ne raspunde plina de entuziasm « Avgofetes ». 
Reteta traditionala greceasca este identica cu cea a binecunoscutelor noastre « friganele ».  Felii de paine veche tavalite in ou si lapte si prajite in ulei.
Eu am ales insa pentru d-voastra varianta cea mai reusita, mai gustoasa si mai aspectoasa si bineinteles cea mai preferata de nepotica mea. In aceasta varianta folosim felii de paine proaspata inmuiate bine in ou si prajite in ulei, servite calde simple sau cu zahar sau miere pe deasupra, un deliciu! 
Si iata de ce consider ca aceasta varianta este cea mai buna! Painea proaspata este mai pufoasa, mai frageda, mai moale si mai gustoasa decat cea veche. In plus, nu are nevoie de mai multa umezeala, deci nu este nevoie sa folosim si lapte si astfel absoarbe o cantitate mai mare de ou. Neavand lapte, feliile de paine nu se inchid la culoare la prajit, dimpotriva ies de o culoare aurie aspectoasa si atragatoare. O recomand cu multa insistenta, mai ales pentru copii, care vor deveni garantat cei mai fideli clienti ai d-voastra!!!

E important sa reglam focul in asa fel incat sa se incalzeasca bine dar sa nu fie la maxim. Batem bine ouale si adaugam sare dupa preferinta. Inmuiem feliile de paine in ou pe o parte si pe alta avand grija sa le patrunda bine. Prajim feliile la foc potrivit inspre tare. Cand se intareste oul si se rumenesc pe o parte, le intoarcem si pe partea cealalta. Le scoatem apoi pe hartie absorbanta si continuam cu restul feliilor. Le servim calde si daca le dorim dulci le adaugam pe deasupra zahar sau miere dupa preferinta.</li>			</ol>

Adaugam miezul de paine pe care l-am stors bine in prealabil. Amestecam din nou pana se uniformizeaza si incepem sa adaugam putin cate putin uleiul si restul de zeama de lamaie amestecand incontinuu in acelasi sens. Continuam pana se absoarbe tot uleiul. Daca nu e suficient de spumoasa, mai punem putin ulei. Daca nu e suficient de acra mai adaugam putina zeama de lamaie sau sare de lamaie. Sare punem numai dupa ce o incercam pentru ca icrele sunt deja sarate. Adaugam si cateva picaturi de colorant rosu ca sa obtinem culoarea la intensitatea preferata.
